Description

This Mix Coffee Cake is buttery, tender, and filled with a warm cinnamon swirl, topped with a sweet crumbly streusel. It’s easy to make, perfectly cozy, and pairs beautifully with a cup of coffee or tea—ideal for breakfast, brunch, or dessert.


Ingredients

For the Cake:

1½ cups all-purpose flour

½ cup granulated sugar

2 tsp baking powder

¼ tsp salt

½ cup milk

⅓ cup vegetable oil

1 large egg

1 tsp vanilla extract

For the Cinnamon Swirl:

⅓ cup packed brown sugar

1 tbsp ground cinnamon

1 tbsp melted butter

For the Crumble Topping:

¼ cup all-purpose flour

¼ cup brown sugar

2 tbsp cold butter, cubed

¼ tsp ground cinnamon


Instructions

  1. Preheat Oven: Preheat oven to 350°F (175°C) and grease and flour an 8-inch square baking pan.
  2. Make Cake Batter: In a large bowl, whisk together flour, granulated sugar, baking powder, and salt. In a separate bowl, whisk milk, oil, egg, and vanilla until smooth. Combine wet and dry ingredients and mix just until combined.
  3. Prepare Cinnamon Swirl: In a small bowl, stir together brown sugar, cinnamon, and melted butter.
  4. Assemble Layers: Pour half the batter into the prepared pan, sprinkle with the cinnamon swirl mixture, then pour the remaining batter over top and spread gently.
  5. Make Crumble Topping: In another bowl, mix flour, brown sugar, and cinnamon. Rub in the cold butter with your fingers until the mixture forms coarse crumbs. Sprinkle evenly over the top of the batter.
  6. Bake: Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  7. Serve: Let the coffee cake cool slightly before slicing. Serve warm or at room temperature.

Notes

Add chopped pecans or walnuts to the crumble for extra crunch.

Fold in diced apples or blueberries to the batter for added flavor.

Drizzle with a simple powdered sugar glaze for a bakery-style finish.

Substitute buttermilk for milk for a softer, tangier crumb.
