Description

My Famous Pumpkin Fritters are a South African classic made with mashed pumpkin, a lightly sweetened batter, and fried until golden brown. Finished with cinnamon sugar, they’re fluffy, comforting, and perfect as a snack, side, or dessert.


Ingredients

230 g mashed pumpkin (cooked and well-drained)

1 egg

1 cup (128 g) self-raising flour, sieved

1/3 teaspoon salt

1 teaspoon baking powder

3 tablespoons brown sugar

23 tablespoons coconut oil (for frying)

Cinnamon sugar, for garnish


Instructions

  1. Boil pumpkin until soft, then strain well to remove excess water. Measure 230 g after draining.
  2. Blend pumpkin and egg together until smooth.
  3. Add flour, salt, baking powder, and brown sugar. Whisk until combined.
  4. Let batter rest for 10 minutes to thicken slightly.
  5. Heat coconut oil in a frying pan. Drop spoonfuls of batter into the pan and fry until golden brown on both sides.
  6. Drain on paper towels and sprinkle with cinnamon sugar before serving.

Notes

Add nutmeg or ginger for extra spice.

Drizzle with honey or maple syrup instead of cinnamon sugar for a sweet twist.

Serve with whipped cream or yogurt for a dessert-style version.

Drain pumpkin well to prevent soggy fritters.

Can be baked at 375°F (190°C) for 15–18 minutes as a lighter option.
