Description

A hearty overnight breakfast casserole made with everything bagels soaked in a savory egg custard, layered with sausage, peppers, tater tots, and a creamy three-cheese blend—perfect for make-ahead mornings and brunch gatherings.


Ingredients

6 everything bagels, lightly toasted and torn into pieces

8 large eggs

1 cup half and half

Salt and black pepper, to taste

2 tablespoons Dijon mustard

⅓ teaspoon cayenne pepper

½ cup shredded Parmesan cheese

1 cup grated cheddar cheese, divided

8 oz cooked sausage links, diced

½ bell pepper, diced

8 oz cream cheese, cut into cubes

1 cup frozen tater tots

Green onions, for garnish


Instructions

  1. Butter a 9×13-inch casserole dish and add the toasted bagel pieces.
  2. In a large bowl, whisk together eggs, half and half, Dijon mustard, cayenne pepper, salt, and pepper until fully combined.
  3. Pour the egg mixture evenly over the bagels, ensuring all pieces are coated.
  4. Add Parmesan cheese and half of the cheddar, then gently toss to combine.
  5. Distribute cream cheese cubes evenly over the casserole.
  6. Top with diced sausage, bell pepper, and tater tots.
  7. Sprinkle the remaining cheddar cheese over the top.
  8. Cover and refrigerate for at least 4 hours or overnight.
  9. Preheat oven to 350°F (175°C). Bake covered for 40 minutes.
  10. Uncover and bake an additional 15 minutes until set and lightly golden.
  11. Let cool for 10 minutes, garnish with green onions, and serve.

Notes

Longer overnight soaking results in a moister casserole.

Lightly toasting the bagels prevents sogginess.

Adjust cayenne or add jalapeños for more heat.
