Ingredients
6 everything bagels, lightly toasted and torn into pieces
8 large eggs
1 cup half and half
Salt and black pepper, to taste
2 tablespoons Dijon mustard
⅓ teaspoon cayenne pepper
½ cup shredded Parmesan cheese
1 cup grated cheddar cheese, divided
8 oz cooked sausage links, diced
½ bell pepper, diced
8 oz cream cheese, cut into cubes
1 cup frozen tater tots
Green onions, for garnish
Instructions
- Butter a 9×13-inch casserole dish and add the toasted bagel pieces.
- In a large bowl, whisk together eggs, half and half, Dijon mustard, cayenne pepper, salt, and pepper until fully combined.
- Pour the egg mixture evenly over the bagels, ensuring all pieces are coated.
- Add Parmesan cheese and half of the cheddar, then gently toss to combine.
- Distribute cream cheese cubes evenly over the casserole.
- Top with diced sausage, bell pepper, and tater tots.
- Sprinkle the remaining cheddar cheese over the top.
- Cover and refrigerate for at least 4 hours or overnight.
- Preheat oven to 350°F (175°C). Bake covered for 40 minutes.
- Uncover and bake an additional 15 minutes until set and lightly golden.
- Let cool for 10 minutes, garnish with green onions, and serve.
