Description

Parmesan-Crusted Roasted Potatoes are a crispy, golden side dish made from baby Yukon Gold potatoes, coated with melted butter, Parmesan cheese, and garlic-herb seasoning. This simple and flavorful dish is perfect for pairing with any main course, making it an easy yet delicious addition to your meal.

Ingredients

2 tablespoons unsalted butter

1 (24-ounce) package baby Yukon Gold potatoes, halved

½ cup freshly grated Parmesan cheese

1 ½ teaspoons garlic and herb seasoning

1 teaspoon kosher salt

Instructions

  1. Preheat the Oven: Preheat the oven to 400°F (200°C).
  2. Prepare the Baking Dish: Melt the butter and spread it evenly over the bottom of a baking dish or sheet pan.
  3. Season the Potatoes: Sprinkle the Parmesan cheese, garlic and herb seasoning, and kosher salt evenly over the butter layer.
  4. Arrange the Potatoes: Place the halved potatoes cut side down onto the cheese mixture, pressing them lightly into the seasoning.
  5. Roast the Potatoes: Roast for 30–35 minutes, or until the potatoes are tender inside and golden crispy on the bottom.
  6. Serve: Allow the potatoes to cool for a few minutes, then use a spatula to carefully lift them from the pan and serve.

Notes

Spicy Version: Add smoked paprika, chili flakes, or a dash of cayenne pepper for a spicy twist.

Cheese Options: Substitute Parmesan with Pecorino Romano or a sharp cheddar for a different flavor profile.

Herb Boost: Add fresh or dried herbs such as rosemary, thyme, or oregano for an extra aromatic punch.

Make it Vegan: Use dairy-free butter and vegan Parmesan to make the recipe vegan-friendly.
