Ingredients
1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
2 carrots, diced
2 celery stalks, diced
1 zucchini, diced
1 cup pearl couscous
6 cups vegetable broth
1 (14.5 oz) can diced tomatoes
1 teaspoon dried thyme
1 teaspoon dried oregano
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, and sauté for about 3 minutes until translucent.
- Stir in carrots, celery, and zucchini, and cook for 5–7 minutes until softened.
- Add pearl couscous, vegetable broth, diced tomatoes, thyme, and oregano.
- Bring to a boil, then reduce heat and simmer for 10–12 minutes until couscous is tender.
- Season with salt and pepper to taste.
- Ladle into bowls and garnish with fresh parsley before serving.
Notes
Stir in chickpeas for extra protein.
Swap zucchini for spinach, bell peppers, or other vegetables.
Use chicken broth instead of vegetable broth for more depth of flavor.
To make it gluten-free, replace couscous with quinoa or a gluten-free alternative.
Add extra broth when reheating since couscous absorbs liquid as it sits.
