Description

A quick and flavorful chicken cabbage stir-fry that combines tender chicken breasts with crisp cabbage and vibrant bell peppers in a savory oyster-soy sauce, perfect for a 20-minute weeknight meal.

Ingredients

Protein

  • 2 chicken breasts, thinly sliced

Vegetables

  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 0.5 head green cabbage, shredded
  • 0.5 jalapeño pepper, finely diced
  • 1 orange bell pepper, diced

Liquids and Sauces

  • 0.5 cup chicken stock
  • 2 tablespoons oyster sauce
  • 1 tablespoon soy sauce

Other

  • 1 tablespoon butter
  • Salt and pepper to taste

Instructions

  1. Prepare ingredients: Thinly slice the chicken breasts and vegetables as indicated to ensure even cooking and quick stir-frying.
  2. Cook chicken: Heat butter in a large skillet over medium-high heat. Add the chicken slices, season with salt and pepper, and stir-fry for 5-7 minutes until the chicken is fully cooked and slightly golden. Remove the chicken from the skillet and set aside.
  3. Sauté vegetables: Using the same skillet, add the sliced onion and cook for 3 minutes until soft. Add minced garlic and diced jalapeño and cook for another minute until fragrant. Then add shredded cabbage and diced orange bell pepper, stirring to combine.
  4. Add sauce: Pour in the chicken stock, oyster sauce, and soy sauce over the vegetables. Stir well to mix all ingredients and cook for 5-7 minutes until the cabbage is tender but still crisp.
  5. Combine and heat: Return the cooked chicken to the skillet and thoroughly mix with the vegetables and sauce. Cook together for an additional 2-3 minutes to blend flavors and heat through evenly.

Notes

  • Increase the amount of jalapeño for a spicier version of this dish.
  • This stir-fry is best served immediately over steamed rice for a complete meal.
  • Using fresh vegetables and freshly minced garlic enhances the flavor significantly.
