Description

A bold and colorful Rasta Pasta made with creamy spiced sauce, tender shrimp, and vibrant bell peppers for a comforting yet exciting weeknight dinner.


Ingredients

1 lb penne pasta, cooked

1/2 lb fresh shrimp, peeled and deveined

1 teaspoon garlic powder

1/2 teaspoon cayenne pepper

1/8 teaspoon ground cinnamon

1/8 teaspoon ground nutmeg

1/2 teaspoon ground cumin

1 teaspoon granulated sugar

1 teaspoon fresh thyme

Salt and pepper, to taste

2 tablespoons butter, divided

2 cloves garlic, minced

1 red bell pepper, thinly sliced

1 yellow bell pepper, thinly sliced

1 green bell pepper, thinly sliced

1 cup heavy cream

1/2 cup cream cheese, softened

1/2 cup grated parmesan cheese, plus 2 tablespoons for garnish

12 green onions, sliced, for garnish


Instructions

  1. Season the shrimp with garlic powder, cayenne, cinnamon, nutmeg, cumin, sugar, thyme, salt, and pepper. Let marinate for about 10 minutes.
  2. Heat a large skillet over medium-high heat and melt 1 tablespoon butter. Add shrimp and cook for 2–3 minutes until pink and opaque. Remove and set aside.
  3. In the same skillet, melt remaining butter over medium-low heat. Add garlic and cook for about 30 seconds until fragrant.
  4. Add bell peppers, increase heat to medium-high, and cook for about 5 minutes until tender-crisp.
  5. Pour in heavy cream and stir in cream cheese and parmesan. Stir continuously until smooth and thickened, about 7 minutes.
  6. Add cooked pasta and shrimp back to the skillet. Stir until evenly coated with sauce.
  7. Garnish with green onions and extra parmesan cheese. Serve immediately.

Notes

Adjust cayenne pepper to control spice level.

Chicken can be substituted for shrimp if desired.

Add mushrooms or spinach for extra vegetables.

If sauce thickens too much, add a splash of cream when reheating.

Best served fresh while sauce is creamy.
