Ingredients
1 cup freshly squeezed lemon juice (about 4–7 lemons)
1 small bunch of fresh mint
2 cups cold water
1 cup light rum (omit for mocktail)
¾ cup lavender simple syrup
Ice cubes
1 cup granulated sugar
1 cup water
¼ cup dried culinary lavender
Instructions
- In a saucepan, combine 1 cup sugar, 1 cup water, and ¼ cup dried lavender. Bring to a boil, then reduce to a simmer for 10 minutes. Turn off the heat, cover, and steep for 1 hour. Strain and chill the syrup.
- In a pitcher, combine the freshly squeezed lemon juice and fresh mint. Muddle gently to release the oils from the mint without over-muddling to avoid a grassy taste.
- Add 2 cups cold water, 1 cup rum (if using), and ¾ cup lavender simple syrup to the pitcher. Stir well to combine.
- Fill glasses with ice cubes and pour the mojito mix into each glass.
- Garnish with lemon wheels, mint sprigs, or lavender for an elegant touch. Serve chilled and enjoy!

Adjust the sweetness by adding more or less lavender simple syrup based on your taste preference.
