Cauliflower Steaks

  • 1 medium head cauliflower (approximately 2-3 pounds)

Seasoning & Oil

  • ¼ cup olive oil
  • 1 teaspoon sea salt (adjust to taste)
  • 1 teaspoon garlic powder (adjust to taste)
  • 1 teaspoon onion powder (adjust to taste)
  • 1 teaspoon smoked paprika (adjust to taste)
  • ½ teaspoon chili powder (adjust to taste)

Garnish (Optional)

  • Chopped fresh parsley


Instructions

  1. Preheat Oven: Preheat your oven to 450º Fahrenheit to ensure it reaches the right temperature for roasting the cauliflower steaks perfectly.
  2. Prepare Cauliflower: Remove the leaves from the base of one medium head of cauliflower using a sharp knife. Slice the cauliflower into two equal halves, then cut two steaks from each half, each about 1 inch thick. Arrange the cauliflower steaks on a large baking sheet.
  3. Make Spice Mixture: In a small bowl, combine ¼ cup olive oil, 1 teaspoon sea salt, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon smoked paprika, and ½ teaspoon chili powder. Mix well until the ingredients are fully blended.
  4. Season Cauliflower: Using a pastry brush, coat the top sides of the cauliflower steaks with half of the olive oil and spice mixture, making sure each steak is even covered.
  5. First Roast: Place the baking sheet with the cauliflower steaks in the preheated oven and roast for 15 minutes to allow them to start browning and cooking through.
  6. Flip and Season Again: Carefully remove the baking sheet from the oven, flip each cauliflower steak over, and brush the remaining spice mixture onto the newly exposed sides.
  7. Second Roast: Return the baking sheet to the oven and roast for an additional 15 minutes, or until the steaks are golden brown and tender when pierced with a fork.
  8. Serve: Remove the baked cauliflower steaks from the oven, transfer to serving plates, garnish with chopped fresh parsley if desired, and serve warm.
