Ingredients
2 cups heirloom tomatoes, sliced
1 sheet puff pastry (about 8 oz), thawed
1 cup fresh basil leaves, torn
½ cup feta cheese, crumbled
2 tablespoons olive oil
Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Roll out the puff pastry on a lightly floured surface until it’s about ¼ inch thick.
- Arrange the sliced heirloom tomatoes evenly on top of the pastry.
- Sprinkle crumbled feta cheese and torn basil leaves over the tomatoes. Drizzle olive oil over the top and season with salt and pepper to taste.
- Bake for 30-35 minutes, or until the puff pastry is golden brown and crispy.
