Ingredients
2 ½ cups all-purpose flour
1 teaspoon salt
1 cup unsalted butter, cold and cut into cubes
6–8 tablespoons ice water
6 cups peeled, cored, and sliced tart apples (Granny Smith works well)
¾ cup granulated sugar
¼ cup brown sugar
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
2 tablespoons all-purpose flour
1 tablespoon lemon juice
1 teaspoon vanilla extract
1 egg (for egg wash)
Optional: Turbinado sugar for sprinkling on top
Instructions
- In a large bowl, whisk together flour and salt. Using a pastry cutter or your fingertips, cut in the cold butter until the mixture resembles coarse crumbs. Gradually add the ice water, one tablespoon at a time, until the dough just comes together. Divide the dough into two disks, wrap them in plastic, and chill for at least 1 hour.
- In a large bowl, toss the sliced apples with granulated sugar, brown sugar, cinnamon, nutmeg, flour, lemon juice, and vanilla extract. Let the mixture sit while you roll out the dough.
- On a floured surface, roll out one disk of dough into a 12-inch circle and place it into a 9-inch pie plate. Pour the apple filling into the crust.
- Roll out the second disk of dough and cover the pie, either with a full top crust or a lattice pattern. Trim the excess dough and crimp the edges to seal. Brush the top crust with beaten egg for a shiny finish and sprinkle with turbinado sugar for extra crunch and sparkle, if desired.
- Place the pie on a baking sheet to catch any drips. Bake at 425°F (220°C) for 15 minutes, then reduce the temperature to 350°F (175°C) and bake for an additional 40–45 minutes, or until the crust is golden and the filling is bubbly.
- Allow the pie to cool for at least 2 hours before slicing to allow the filling to set. Serve and enjoy!
