Description

This Strawberry Bread is a moist, fluffy loaf packed with juicy strawberries and topped with a sweet glaze, making it the perfect spring treat for breakfast, dessert, or gifting.


Ingredients

¾ cup granulated sugar

½ cup milk

½ cup oil

1 large egg

1 teaspoon vanilla or almond extract

2 cups all-purpose flour

2 teaspoons baking powder

¼ teaspoon salt

2 cups diced strawberries

2 tablespoons all-purpose flour (to coat strawberries)

2 cups powdered sugar

2 tablespoons melted butter

⅓ cup finely diced strawberries

½ teaspoon vanilla or almond extract

12 tablespoons heavy cream or milk (optional, for consistency)


Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9″x5″ loaf pan and set aside.
  2. Mix Wet Ingredients: In a medium bowl, whisk together sugar, milk, oil, egg, and vanilla or almond extract until smooth.
  3. Mix Dry Ingredients: In a separate bowl, whisk together flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, stirring just until combined.
  4. Prepare the Strawberries: Toss diced strawberries with 2 tablespoons of flour. Fold them into the batter.
  5. Bake the Bread: Pour the batter into the prepared loaf pan and bake for 50–55 minutes or until a toothpick comes out clean.
  6. Cool the Bread: Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  7. Make the Glaze: Whisk together powdered sugar, melted butter, diced strawberries, and extract. Add heavy cream or milk to adjust consistency as needed.
  8. Drizzle the Glaze: Once the bread is completely cool, drizzle the glaze over the top. Let it set before slicing and serving.

Notes

For a vegan version, substitute the egg with a flax egg (1 tbsp flaxseed meal + 2 tbsp water), and use plant-based milk and vegan butter.

Add ½ cup of chopped walnuts or pecans for extra crunch.

For a citrus twist, add a tablespoon of lemon zest to the batter.

This bread can also be made with frozen strawberries; just ensure they are thawed and drained well.
