Description

This Easy No-Bake Strawberry Cheesecake is a creamy, fruity dessert with a buttery biscuit base, luscious cream cheese filling, and fresh strawberries on top. Simple to prepare and perfect for summer, it’s a refreshing and impressive dessert without needing the oven.


Ingredients

For the base:

200 g (7 oz) digestive biscuits, crushed

80 g (3 oz) unsalted butter, melted

For the cheesecake filling:

300 ml (1.25 cups) double cream

400 g (14 oz) full-fat cream cheese

100 g (3.5 oz) icing sugar, sifted

400 g (1 lb) strawberries, finely chopped and drained

For the topping:

200 g (7 oz) strawberries, some whole and some halved


Instructions

  1. Line the base of a springform tin with baking paper.
  2. Combine the crushed digestive biscuits and melted butter in a bowl until evenly coated.
  3. Press the mixture firmly into the base of the tin to form an even layer. Chill in the fridge while preparing the filling.
  4. Finely chop the strawberries and place them in a sieve to drain any excess juice.
  5. In a large bowl, whisk together the double cream, cream cheese, and icing sugar until thick and creamy.
  6. Gently fold in the drained strawberries until evenly mixed.
  7. Spoon the filling over the chilled base and smooth the top with a spatula.
  8. Refrigerate for at least 4 hours, or preferably overnight, until fully set.
  9. Before serving, remove from the tin and decorate with whole and halved strawberries.

Notes

Drain strawberries well to prevent excess moisture in the filling.

Use a mix of fresh fruit for variations — raspberries, blueberries, or mango all work beautifully.

Make ahead the day before for best results.

For a chocolate twist, drizzle melted white chocolate over the top before serving.

Store covered in the fridge for up to 3 days or freeze for up to 2 months.
