This Easy No-Bake Strawberry Cheesecake is a creamy, fruity dessert with a buttery biscuit base, luscious cream cheese filling, and fresh strawberries on top. Simple to prepare and perfect for summer, it’s a refreshing and impressive dessert without needing the oven.
Ingredients
For the base:
200 g (7 oz) digestive biscuits, crushed
80 g (3 oz) unsalted butter, melted
For the cheesecake filling:
300 ml (1.25 cups) double cream
400 g (14 oz) full-fat cream cheese
100 g (3.5 oz) icing sugar, sifted
400 g (1 lb) strawberries, finely chopped and drained
For the topping:
200 g (7 oz) strawberries, some whole and some halved
Instructions
- Line the base of a springform tin with baking paper.
- Combine the crushed digestive biscuits and melted butter in a bowl until evenly coated.
- Press the mixture firmly into the base of the tin to form an even layer. Chill in the fridge while preparing the filling.
- Finely chop the strawberries and place them in a sieve to drain any excess juice.
- In a large bowl, whisk together the double cream, cream cheese, and icing sugar until thick and creamy.
- Gently fold in the drained strawberries until evenly mixed.
- Spoon the filling over the chilled base and smooth the top with a spatula.
- Refrigerate for at least 4 hours, or preferably overnight, until fully set.
- Before serving, remove from the tin and decorate with whole and halved strawberries.
Notes
Drain strawberries well to prevent excess moisture in the filling.
Use a mix of fresh fruit for variations — raspberries, blueberries, or mango all work beautifully.
Make ahead the day before for best results.
For a chocolate twist, drizzle melted white chocolate over the top before serving.
Store covered in the fridge for up to 3 days or freeze for up to 2 months.
