Ingredients
2 cups fresh corn kernels (or 1 can, drained)
1 cup creamed corn
1 cup sour cream
1 cup shredded cheddar cheese
1/2 cup honey
1/2 cup unsalted butter, melted
1 cup cornmeal
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
2 large eggs, beaten
Chopped chives or parsley, for garnish (optional)
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, combine corn kernels, creamed corn, sour cream, cheddar cheese, honey, and melted butter.
- In a separate bowl, whisk together cornmeal, baking powder, salt, black pepper, and garlic powder.
- Add the dry ingredients to the wet mixture and stir until just combined.
