Ingredients
1 large sweet potato, peeled and diced
1 tbsp olive oil
1/2 tsp cinnamon

1 tbsp nut butter (peanut, almond, or cashew)
1/4 cup low-sugar granola
1/4 cup fresh fruit (berries, banana slices, or apple)

Instructions
- Preheat the oven to 400°F (200°C).
- Toss the diced sweet potato with olive oil, cinnamon, salt, and black pepper until evenly coated.
- Spread the sweet potatoes in a single layer on a baking sheet.
