Ingredients

2 medium sweet potatoes (about 1 lb / 450 g), peeled and cubed

2 tablespoons olive oil

½ teaspoon sea salt

¼ teaspoon black pepper

4 cups mixed salad greens (arugula, spinach, or baby kale)

½ small red onion, thinly sliced

½ cup crumbled goat cheese (chèvre)

¼ cup pomegranate seeds

2 tablespoons pumpkin seeds or walnuts

Dressing:

3 tablespoons olive oil

1 tablespoon balsamic vinegar

1 teaspoon Dijon mustard

1 teaspoon honey or maple syrup

Salt and pepper to taste


Instructions

  1. Preheat the oven to 400°F (200°C). Toss the cubed sweet potatoes with olive oil, sea salt, and black pepper, then spread on a baking sheet.
  2. Roast for 25–30 minutes, stirring halfway through, until golden and tender. Let cool slightly.
  3. In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, honey (or maple syrup), salt, and pepper to make the dressing.
  4. Arrange mixed greens on a serving platter or in a large bowl. Top with roasted sweet potatoes, sliced red onion, crumbled goat cheese, pomegranate seeds, and pumpkin seeds or walnuts.
  5. Drizzle the dressing over the salad and toss gently to combine just before serving.

Notes

Let roasted sweet potatoes cool slightly before adding to the greens to prevent wilting.

Substitute roasted pumpkin or butternut squash for sweet potatoes.

Use feta or blue cheese instead of goat cheese for a different flavor.

For extra crunch, add roasted chickpeas or candied pecans.

Make it vegan by using maple syrup and skipping or replacing the cheese with a vegan alternative.
