Ingredients
1 cup heavy cream
4 cloves garlic, minced
2 tablespoons olive oil
2 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon dried oregano
1 teaspoon dried basil
Red pepper flakes (optional)
1/4 cup grated Parmesan cheese
Instructions
- Heat olive oil in a medium saucepan over medium heat. Add minced garlic and sauté for 1–2 minutes until fragrant, but not browned.
- Sprinkle flour over the garlic and stir to form a roux. Cook for 1 minute to eliminate the raw flour taste.
- Slowly whisk in the heavy cream, ensuring no lumps form. Stir in salt, black pepper, oregano, basil, and red pepper flakes (if using).
- Continue cooking over medium heat, whisking continuously for 5–7 minutes until the sauce thickens.
- Remove from heat and stir in the grated Parmesan cheese until melted and smooth.
- Allow the sauce to cool slightly before spreading it on your pizza dough.
Notes
Lightened-up version: Use whole milk instead of half of the heavy cream for a less rich sauce.
Extra garlic: Add more minced garlic for a stronger flavor.
Spicy: Increase red pepper flakes for more heat.
Herb variations: Try thyme, rosemary, or parsley for different flavor profiles.
