Description

White Lasagna Soup is a comforting, creamy soup that combines the flavors of traditional lasagna in a hearty, one-pot dish with ricotta, mozzarella, sausage, and lasagna noodles.


Ingredients

1 tablespoon olive oil

1 lb Italian sausage (or ground turkey for a lighter option)

1 medium onion, chopped

2 cloves garlic, minced

4 cups chicken broth

1 cup heavy cream

1 can (14.5 oz) diced tomatoes

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon dried thyme

8 oz uncooked lasagna noodles, broken into pieces

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese

Salt and pepper to taste


Instructions

  1. Cook the Sausage: Heat olive oil in a large pot over medium heat. Add sausage and cook until browned, breaking it up into crumbles. Remove excess grease if needed.
  2. Sauté the Vegetables: Add chopped onion and minced garlic to the pot. Cook for 3-4 minutes until the onions are soft and fragrant.
  3. Add the Broth and Seasonings: Add chicken broth, heavy cream, diced tomatoes, oregano, basil, thyme, salt, and pepper. Bring to a boil, then reduce heat to a simmer.
  4. Add the Lasagna Noodles: Add broken lasagna noodles and cook for 10-12 minutes, or until the noodles are tender and have absorbed the flavors.
  5. Stir in the Spinach and Cheese: Add chopped spinach and cook for another 2-3 minutes until wilted. Stir in ricotta and shredded mozzarella until melted and creamy.
  6. Serve: Ladle soup into bowls and top with extra cheese if desired. Serve with crusty bread or garlic bread.

Notes

For a vegetarian version, substitute the sausage with mushrooms, zucchini, or plant-based sausage alternatives.

Add more veggies like bell peppers, carrots, or peas for added flavor and texture.

For a spicier kick, add red pepper flakes or a chopped jalapeño to the broth.
