Description
This Apple Streusel Pie is a delightful fall dessert featuring a creamy cinnamon-spiced apple filling made with coconut yogurt and a golden, buttery streusel topping with chopped walnuts and pecans, all baked to perfection in a flaky pie crust.
Ingredients
Pie Filling
- 1 cup Harmless Harvest Organic Coconut Yogurt
- 3/4 cup white sugar
- 1 large egg
- 1/4 cup flour
- 1/4 tsp nutmeg
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 2 tsp vanilla extract
- 4 cups apples, peeled & sliced 1/4” thick (about 4-5 large apples; mix of Granny Smith, Honeycrisp, & Envy)
- 1 pie crust, unbaked
Streusel Topping
- 1 cup flour
- 1/2 cup light brown sugar
- 1 heaping tsp cinnamon
- 1/4 tsp salt
- 1/2 cup walnuts, chopped
- 1/2 cup pecans, chopped
- 1/2 cup butter, melted (1 stick)
Instructions
- Preheat and Prepare Filling: Preheat your oven to 350°F. In a mixing bowl, whisk together the coconut yogurt, white sugar, egg, flour, nutmeg, cinnamon, salt, and vanilla extract until smooth. Add the peeled and sliced apples to the mixture and stir well until the apples are evenly coated. Let this mixture sit for at least 30 minutes to allow the flavors to meld and the filling to thicken slightly.
- Make the Streusel Topping: In a separate bowl, combine the flour, light brown sugar, cinnamon, salt, chopped walnuts, and chopped pecans. Use a fork to mix in the melted butter until the mixture forms a crumbly streusel texture.
- Assemble the Pie: Grease a pie plate and lay out the unbaked pie crust ensuring it’s at room temperature to prevent cracking. Pour the apple filling along with all the juices into the pie crust, spreading it evenly.
- Add Streusel and Bake: Evenly spread the prepared streusel topping over the apple filling. Place the pie in the preheated oven and bake for 40 to 50 minutes, until the streusel is golden brown and the filling is bubbling.
- Cool Before Serving: Remove the pie from the oven and allow it to sit for at least 30 minutes before serving to let the filling set properly for clean slices and optimal flavor.
Notes
- Using a mix of apple varieties balances tartness and sweetness perfectly.
- Make sure the pie crust is at room temperature before laying it in the pie plate to avoid cracking.
- If the streusel browns too quickly, cover the pie loosely with foil during the last 10 minutes of baking.
- Allow the pie to cool thoroughly before slicing to ensure the filling firms up.
- Walnuts and pecans can be substituted with other nuts like almonds or omitted for a nut-free version.
