Ingredients
Portobello Mushrooms
- 12 oz small portobello mushrooms (approx. 2-inch diameter, Baby Bella mushrooms)
Marinade & Seasoning
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 tablespoon fresh thyme, divided (plus extra for garnish)
- 3 cloves garlic, sliced
- Fresh cracked pepper, to taste
- Sea salt, to taste
Instructions
- Preheat the Oven: Preheat your oven to 425ºF (220ºC) to get it ready for roasting the mushrooms.
- Prepare Mushrooms: Remove the stems from the mushrooms and set them aside for another use. Place the mushrooms top side down in a cast-iron skillet, ensuring they are evenly spaced for even roasting.
- Make the Marinade: In a small bowl, whisk together the olive oil and balsamic vinegar until well combined. Drizzle this mixture evenly over the mushrooms in the skillet.
- Add Garlic and Herbs: Thinly slice the garlic cloves and sprinkle them over and inside each mushroom cap for fragrancy. Follow by sprinkling about 2 teaspoons of fresh thyme over the mushrooms. Season with sea salt and freshly cracked black pepper to taste.
- Roast: Place the skillet in the preheated oven and roast the mushrooms for 5 to 10 minutes, depending on desired tenderness. Eight minutes is ideal for tender yet firm mushrooms that retain a bit of bite.
- Finish and Serve: Remove the skillet from the oven and carefully transfer the mushrooms to a serving plate. Drizzle any juices, garlic, oil, and vinegar left in the pan over the mushrooms. Garnish with the remaining 1 teaspoon of fresh thyme leaves and additional sprigs of thyme. Serve immediately for best flavor.
