Description

This creamy Biscoff Banana Pudding combines the classic creamy texture of traditional banana pudding with the spicy, caramelized flavor of Biscoff cookies. A no-bake layered dessert featuring instant vanilla pudding, whipped cream, ripe bananas, and crumbled Biscoff cookies, this dish is perfect for an easy yet indulgent treat that can be prepared ahead and chilled.

Ingredients

Pudding Mixture

  • 350 g cold milk
  • 397 g sweetened condensed milk (1 can)
  • 102 g instant vanilla pudding mix (1 package)

Whipped Cream

  • 470 g whipping cream

Other Ingredients

  • 26 Biscoff cookies
  • 4 large ripe bananas

Instructions

  1. Prepare Pudding Base: In a medium bowl, whisk together the cold milk, sweetened condensed milk, and instant vanilla pudding mix until the pudding mix dissolves completely. Place the mixture in the refrigerator to set while you prepare the whipped cream.
  2. Whip Cream: In a large mixing bowl, add the whipping cream. Using an electric hand mixer fitted with a whisk attachment, whip the cream until firm peaks form, ensuring the cream has enough volume to fold into the pudding mixture.
  3. Combine Pudding and Whipped Cream: Remove the chilled pudding mixture from the fridge and gently fold it into the whipped cream using a spatula until fully incorporated with no streaks visible. This creates a creamy, airy pudding mixture.
  4. First Layer: Spread half of the combined pudding mixture evenly into a 9×13-inch dish using a spatula.
  5. Add Bananas and Cookies: Slice the bananas into ¼-inch thick coins. Layer approximately three-quarters of the banana slices over the pudding layer. Crumble about 18 Biscoff cookies and sprinkle them evenly over the banana layer.
  6. Second Pudding Layer: Cover the cookie and banana layer with the remaining pudding mixture, spreading it out evenly.
  7. Top Garnish: Sprinkle the remaining Biscoff cookies crumbled and the remainder of the banana slices on top as garnish. For serving 1-2 days later, add the final banana slices just before serving to keep them fresh and prevent browning.
  8. Chill and Serve: Refrigerate the assembled pudding for at least 2 hours to allow flavors to meld and the pudding to set before serving.

Notes

  • Use ripe but firm bananas for the best texture and flavor.
  • Adding the last banana slices just before serving prevents browning and keeps the pudding visually appealing.
  • This pudding is best served chilled and can be made a day ahead.
  • Substituting dairy-free whipping cream or condensed milk can make this recipe dairy-free with some adjustments.
  • Crumbled Biscoff cookies add a delightful crunch and spiced taste that complements the sweetness of the pudding perfectly.
