Ingredients
Cake
- 1 white cake mix plus ingredients required according to package directions
- Orange gel food coloring
- Yellow gel food coloring
- 14 oz sweetened condensed milk
Frosting
- 1 cup confectioner’s sugar
- 8 oz cream cheese, softened
- 1 tbsp vanilla extract
- 2 cups heavy cream
Decoration
- Candy corn pieces, for decorating
Instructions
- Prepare the Cake Batter: Lightly grease a 9×13-inch baking pan. Prepare the white cake mix according to package instructions. Divide the batter equally into three bowls with about 1½ cups each. Add yellow gel food coloring to one bowl and stir until bright yellow, orange gel food coloring to the second and mix evenly, leave the third bowl plain white.
- Layer and Chill: Pour the yellow batter evenly into the prepared pan, smoothing it out. Freeze for 20 minutes on a level surface. Remove from freezer carefully and pour the orange batter over the yellow layer without mixing. Freeze again for 20 minutes. Once chilled, pour the white batter evenly on top.
- Bake the Layered Cake: Preheat oven to 350°F (175°C). Let the layered batter sit at room temperature for 30 minutes. Bake following cake mix package directions until a toothpick inserted in the center comes out clean or with moist crumbs.
- Poke and Soak: While the cake is still warm, use a chopstick or wooden spoon handle to poke holes about 1 inch apart across the entire surface in even rows. Slowly pour the sweetened condensed milk over, ensuring it seeps into the holes and covers the cake evenly. Cover and refrigerate overnight or for at least 8 hours.
- Chill the Mixing Bowl: Before making frosting, chill a clean mixing bowl in the freezer for 15 minutes to help whip the heavy cream easily.
- Make the Cream Cheese Whipped Frosting: In a separate bowl, beat softened cream cheese, confectioner’s sugar, and vanilla extract until smooth and creamy. Remove the chilled bowl and pour in heavy cream. Beat on medium speed 1-2 minutes, then high speed until stiff peaks form. Gently fold the cream cheese mixture into the whipped cream until combined, taking care not to overmix to maintain fluffiness.
- Decorate the Cake: Remove the cake from refrigerator. Spread the cream cheese whipped frosting evenly on top. Arrange candy corn pieces across the frosting for a festive look.
- Serve: Cut the cake into 12 pieces and serve chilled.
Notes
- Freezing the yellow and orange batter layers helps keep the colors distinct and prevent mixing.
- Gel food coloring is preferred for vibrant colors without adding extra liquid.
- The cake should be refrigerated overnight to allow the sweetened condensed milk to fully soak in and create moisture.
- Decorate with candy corn just before serving to prevent color bleeding and softening.
- The frosting bowl should be chilled prior to whipping heavy cream for better volume and stiffness.
- The cake can be made a day ahead, including the soaking, frosting, and decorating steps.
- Leftovers keep well refrigerated for 3-4 days or frozen up to 2 months without decorations.
- Homemade white cake batter can be used instead of boxed mix if desired.
