Description

These Chicken Caesar Lettuce Wraps offer a fresh and crunchy twist on the classic Caesar salad by wrapping marinated grilled chicken, crisp lettuce, Parmesan, and garlic croutons in buttery lettuce leaves. Perfect for a light lunch or appetizer, the chicken is marinated in a flavorful Caesar-inspired blend, grilled to juicy perfection, and combined with classic Caesar salad ingredients for easy assembly. Components can be prepared ahead for quick meal assembly on the day you serve.

Ingredients

For the Chicken Marinade

  • 1.5 to 2 pounds boneless skinless chicken breasts
  • ¼ cup extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • ½ teaspoon lemon zest
  • 1½ teaspoons Worcestershire sauce
  • 2 teaspoons anchovy paste
  • 2 garlic cloves, finely grated or minced
  • 2 teaspoons Dijon mustard
  • 1 teaspoon honey
  • ¼ teaspoon red pepper flakes (optional)
  • ½ – ¾ teaspoons Kosher salt, or to taste
  • ½ teaspoon freshly ground black pepper, to taste

For the Wraps

  • 1½ to 2 cups finely chopped romaine or little gem lettuce
  • ½ cup shaved Parmesan cheese, or more to taste
  • 1½ to 2 cups garlic croutons, roughly chopped
  • ½ cup Caesar dressing, or to taste
  • Butter lettuce leaves or large romaine leaves (about 12–16 leaves total)
  • Freshly ground black pepper and lemon wedges, for garnish

Instructions

  1. Marinate the Chicken: In a small bowl or jar, whisk together olive oil, lemon juice, lemon zest, Worcestershire sauce, anchovy paste, garlic, Dijon mustard, honey, red pepper flakes, salt, and pepper until well blended. Taste and adjust seasoning as needed. Toss the chicken breasts with the marinade to coat thoroughly. Cover and refrigerate for 2 to 6 hours to allow the flavors to develop.
  2. Bring Chicken to Room Temperature: Remove the marinated chicken from the fridge 20–30 minutes before grilling to take the chill off and ensure even cooking.
  3. Grill the Chicken: Preheat your grill to medium-high heat (around 400°F). Place the chicken breasts on the grill and cook for 5 to 7 minutes per side, depending on thickness, until the internal temperature reads 165°F. Remove from heat and let the chicken rest for 5 minutes to retain juices.
  4. Prepare the Filling: Slice the grilled chicken into bite-sized pieces. In a large bowl, combine the chopped romaine or little gem lettuce with the sliced chicken. Toss lightly with Caesar dressing to coat evenly, or choose to drizzle dressing later when assembling for a varied texture.
  5. Assemble the Wraps: Lay out the butter lettuce or large romaine leaves on a serving platter. Spoon the chicken and lettuce mixture onto each leaf. Top each wrap with shaved Parmesan, a sprinkle of roughly chopped garlic croutons, and drizzle additional Caesar dressing if desired. Finish with freshly ground black pepper and a squeeze of fresh lemon juice for brightness.
  6. Storage: If you have leftovers, store the lettuce leaves, grilled chicken, Caesar dressing, Parmesan, and croutons separately in airtight containers to keep components fresh and prevent sogginess until ready to assemble again.

Notes

  • Marinate the chicken between 2 to 6 hours for best flavor absorption without losing texture.
  • Bring chicken to room temperature before grilling to ensure even cooking and juiciness.
  • If you prefer, you can substitute grilled chicken with cooked shrimp for a variation.
  • The wraps are best assembled just before serving to maintain the crispness of the lettuce and croutons.
  • Adjust Caesar dressing quantity to your preferred level of creaminess.
  • Use butter lettuce for a tender, flexible wrap or romaine leaves for a sturdier hold.
  • To make it gluten-free, use gluten-free croutons or omit croutons entirely.
