  • 6 cups shredded cabbage (mix of green and red, or bagged coleslaw mix)
  • 1 cup matchstick carrots
  • 1 red bell pepper, julienned
  • 1 cup chow mein noodles
  • 3/4 cup shelled edamame
  • 1/2 cup fresh cilantro leaves, roughly chopped
  • 1/4 cup thinly sliced green onion
  • 1 jalapeño, seeds and ribs removed, thinly sliced (optional)
  • Kosher salt to taste

Orange-Sesame Miso Dressing

  • 1/4 cup fresh orange juice (from 1 orange)
  • 2 Tbsp tahini
  • 2 Tbsp rice vinegar
  • 1 Tbsp white miso paste
  • 1 Tbsp honey
  • 1 Tbsp toasted sesame oil


Instructions

  1. Prepare Dressing: Combine fresh orange juice, tahini, rice vinegar, white miso paste, honey, and toasted sesame oil in a medium bowl or glass jar. Use an immersion blender, frother, or whisk to mix until the dressing is smooth and creamy. Taste and add a pinch of kosher salt if needed to balance the flavors.
  2. Assemble Salad: In a large bowl, combine shredded cabbage, matchstick carrots, julienned red bell pepper, chow mein noodles, shelled edamame, chopped cilantro, sliced green onions, and thinly sliced jalapeño if using. Lightly season the salad mixture with kosher salt.
  3. Toss and Garnish: Pour the prepared orange-sesame miso dressing over the salad ingredients. Toss gently to evenly coat all vegetables and noodles with the dressing. Garnish with toasted sesame seeds if desired, then serve immediately or refrigerate until ready to eat.
