Instructions

  1. Prepare the baking pan: Preheat your oven to 350°F. Generously coat a 9×13-inch metal baking pan with cooking spray. Line the bottom and two long sides with parchment paper, allowing the paper to overhang the edges to create a sling for easy removal of the cake later.
  2. Mix dry ingredients: In a medium bowl, whisk together 2 2/3 cups cake flour, 2 teaspoons baking powder, and 1/2 teaspoon baking soda until well combined.
  3. Combine wet ingredients: In a liquid measuring cup, whisk 1 1/3 cups room-temperature buttermilk, 1 teaspoon vanilla extract, and 1/2 teaspoon kosher salt thoroughly.
  4. Cream butter and sugar: Using a stand mixer fitted with a paddle attachment, beat 2 sticks of room-temperature unsalted butter and 1 1/2 cups granulated sugar on medium speed until light and fluffy, approximately 3 to 4 minutes, scraping down the sides occasionally.
