Description

Cranberry Pecan Goat Cheese Bites are a delightful appetizer combining creamy goat cheese with a sweet and savory coating of chopped pecans, dried cranberries, and fresh parsley. Perfect for holidays or any gathering, these bites offer a burst of flavor and texture, especially when topped with a tangy balsamic reduction.

Ingredients

Cheese Mixture

  • 8 ounces goat cheese, room temperature
  • 3 cloves garlic, minced
  • 2 teaspoons honey
  • ⅛ teaspoon ground pepper

Coating

  • ½ cup chopped pecans
  • ½ cup chopped dried cranberries
  • ¼ cup chopped Italian (flat leaf) parsley
  • Balsamic reduction, for drizzling (optional)

Instructions

  1. Prepare the Cheese Mixture: In a medium bowl, combine the room temperature goat cheese, minced garlic, honey, and ground pepper. Mix thoroughly using a rubber spatula until the ingredients are well incorporated.
  2. Mix the Coating: In a separate medium bowl, combine the chopped pecans, dried cranberries, and chopped parsley to create the coating mixture.
  3. Form Goat Cheese Balls: Using a small cookie scoop or teaspoon, scoop about two teaspoons of the goat cheese mixture and roll it into a ball with your hands.
  4. Coat the Goat Cheese: Press each goat cheese ball into the nut and cranberry mixture to cover both sides as you slightly flatten it. Then, carefully reroll the goat cheese into a ball shape and, if desired, roll it again in the coating for more coverage.
  5. Chill Before Serving: Arrange the coated goat cheese bites on a serving platter. For best taste and texture, refrigerate them for about 30 minutes before serving, although they can also be served immediately.
  6. Optional Balsamic Drizzle: Just before serving, drizzle the bites with a balsamic reduction to add a delicious tangy finishing touch.

Notes

  • The balsamic reduction used for drizzling was made by halving a standard recipe to 1 cup and adding 1 1/2 teaspoons of honey while simmering.
  • This appetizer is best served chilled to enhance the flavors and firmness of the goat cheese bites.
  • You can prepare the bites ahead of time and store them in the refrigerator until serving.
  • For added texture, toast the pecans lightly before chopping them if desired.
  • If you prefer, the balsamic reduction can be omitted and the bites served as is for a simpler presentation.
