Description
This rich and creamy Dark Chocolate Gelato recipe is a simple Italian dessert made with just six main ingredients. It features a smooth cocoa base enriched with dark chocolate and cream, delivering intense chocolate flavor without being overly sweet. The gelato requires no complicated steps and is perfect for chocolate lovers seeking an authentic, easy-to-make frozen treat.
Ingredients
Dry Ingredients
- ⅓ cup Dutch-processed cocoa powder
- 2 tablespoons cornstarch
- ¾ cup granulated sugar
- ¼ teaspoon sea salt
Dairy and Chocolate
- 2 ¾ cups whole milk, divided
- 4 ounces dark chocolate, coarsely chopped
- ¾ cup heavy cream
Flavorings & Optional Ingredients
- 1 teaspoon vanilla extract
- 1–2 tablespoons corn syrup, agave, or honey (optional)
- 1 tablespoon vodka or espresso liqueur (optional, for softer texture)
Instructions
- Make the Gelato Base: In a medium saucepan, whisk together the Dutch-processed cocoa powder, granulated sugar, and sea salt until well combined. In a small bowl, mix the cornstarch with ½ cup of the milk to form a smooth slurry. Gradually whisk the slurry and the remaining 2¼ cups of milk into the cocoa mixture. Place the pan over medium heat and whisk frequently until the mixture begins to gently bubble.
- Thicken the Custard: Reduce the heat to low and simmer the mixture for 2 to 3 minutes, whisking constantly, until it thickens to a loose custard consistency. Remove the pan from heat.
- Melt Chocolate and Add Cream: Stir in the coarsely chopped dark chocolate until fully melted and the mixture is smooth. Then, add the heavy cream and vanilla extract, stirring to combine. If desired, incorporate 1–2 tablespoons of corn syrup, agave, or honey, and/or 1 tablespoon of vodka or espresso liqueur for a smoother texture and improved scoopability.
- Optional Straining: For an ultra-smooth gelato base, strain the mixture through a fine mesh sieve into a container.
- Chill the Base: Press plastic wrap directly onto the surface of the gelato base to prevent a skin from forming and refrigerate for at least 4 hours or up to 2 days to thoroughly chill.
- Churn the Gelato: Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions, usually about 20 to 25 minutes, until it resembles soft-serve consistency. Stop churning when the texture looks creamy but not fully firm.
- Freeze to Firm: Transfer the gelato to a freezer-safe container and freeze for 2 to 3 hours until firm enough to scoop.
- Serve: To prevent over-hardening from home freezers, let the gelato sit at room temperature for about 5 minutes before scooping. Garnish if desired and enjoy!
Notes
- Using Dutch-processed cocoa powder ensures a rich chocolate flavor without bitterness.
- Optional corn syrup, agave, honey, or vodka/espresso liqueur help improve texture and scoopability.
- Straining the base through a fine mesh sieve results in a silky smooth gelato.
- Letting the gelato soften slightly before scooping prevents it from being too hard and improves mouthfeel.
- Store gelato in an airtight container in the freezer for up to 2 days for the best texture.
