These burritos can be made ahead, frozen, and reheated for a hassle-free, delicious breakfast any day of the week.
Ingredients
Breakfast Burritos
- 6 eggs
- 6 flour tortillas (8 inch)
- ¼ pound sausage
- ¼ cup salsa
- ½ cup shredded cheddar cheese
Instructions
- Cook the sausage: Brown the sausage in a skillet over medium heat until fully cooked and no longer pink. Once done, transfer the sausage to a bowl and set aside.
- Scramble the eggs: In the same skillet over medium heat, scramble the eggs until they are fully cooked but still moist. Remove from heat and set aside in a separate bowl.
- Assemble the burritos: Lay the flour tortillas flat on a clean surface. Evenly distribute the scrambled eggs, cooked sausage, salsa, and shredded cheddar cheese onto each tortilla.
- Wrap the burritos: Fold the sides of each tortilla over the filling and roll them up tightly to form burritos.
- Freeze the burritos: Arrange the burritos on a baking sheet in a single layer, making sure they don’t touch, and place them in the freezer for 1 hour to freeze individually.
- Store the burritos: After freezing, transfer the burritos to a freezer-safe bag or container. Seal tightly and store in the freezer for up to 3 months.
- Reheat instructions: When ready to eat, remove a burrito from the freezer bag. Wrap it in a damp paper towel and microwave on high for up to 2 minutes or until heated through. Enjoy a warm, easy breakfast!
Notes
- You can substitute sausage with cooked bacon or ham if preferred.
- For a spicier version, use spicy salsa or add diced jalapeños.
- Make sure to tightly wrap burritos to prevent freezer burn.
- If desired, add cooked vegetables like bell peppers or onions for extra nutrition.
- These burritos can also be reheated in a toaster oven or conventional oven for a crispier tortilla.
