Description

Funeral Potatoes are a classic comfort food casserole featuring creamy sour cream and cheddar cheese coated hash browns, topped with buttery crunchy corn flakes. This easy-to-make dish is perfect for family gatherings, potlucks, or hearty weeknight dinners, delivering a satisfying combination of creamy and crispy textures with baked golden goodness.

Ingredients

Main Ingredients

  • 2 pounds frozen southern-style hash browns
  • 2 tablespoons minced onions (frozen)
  • 2 cups sour cream
  • 10.5 oz cream of chicken soup
  • 4 tablespoons melted butter
  • 1 teaspoon salt
  • 2 cups shredded cheddar cheese

Topping

  • 2 1/2 cups crushed corn flakes
  • 2 tablespoons melted butter (for topping)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and spray a 9×13 inch casserole dish with nonstick cooking spray to prevent sticking.
  2. Mix Hash Browns and Onions: In a large mixing bowl, combine the frozen southern-style hash browns with the minced frozen onions until evenly distributed.
  3. Prepare Casserole Mixture: Add sour cream, cream of chicken soup, 4 tablespoons melted butter, salt, and shredded cheddar cheese to the hash browns and onions. Stir thoroughly to evenly combine all ingredients.
  4. Assemble in Dish: Pour the potato mixture into the prepared casserole dish, spreading it out evenly.
  5. Prepare Topping: In a separate bowl, mix crushed corn flakes with the remaining 2 tablespoons of melted butter until the flakes are well coated.
  6. Add Topping and Bake: Sprinkle the buttery cornflake mixture evenly over the top of the casserole. Bake in the preheated oven for 40-45 minutes, or until the topping is golden brown and the casserole is bubbly.
