Description

Machaca con Huevos is a traditional Mexican breakfast dish featuring shredded dried beef (machaca) scrambled with eggs, tomatoes, onions, jalapeño, and topped with fresh cilantro. This flavorful and hearty meal is quick to prepare, making it perfect for a satisfying morning or brunch option.

Ingredients

Main Ingredients

  • 2 tablespoons Mazola® Corn Oil
  • ¼ onion, diced
  • 1 jalapeño, finely diced
  • 1 tomato, diced
  • 1 clove garlic, minced
  • 3.5 oz dried machaca
  • 6 eggs
  • ½ teaspoon salt
  • ¼ bunch cilantro

Instructions

  1. Heat the oil: Pour 2 tablespoons of Mazola® Corn Oil into a large skillet and heat it over medium heat to prepare for sautéing the vegetables.
  2. Sauté onion and jalapeño: Add the diced onion and finely diced jalapeño to the hot skillet. Cook for 1 minute, stirring occasionally, until softened and fragrant.
  3. Add tomato: Incorporate the diced tomato into the skillet and cook for 3 minutes, allowing the tomato to soften and blend with the other ingredients.
  4. Add machaca and garlic: Add the 3.5 oz dried machaca along with the minced garlic to the skillet. Cook for 5 minutes, stirring frequently to rehydrate the machaca and combine flavors.
  5. Whisk eggs: While the machaca mixture cooks, whisk 6 eggs in a separate bowl until fully blended.
  6. Cook eggs with machaca: Pour the eggs and ½ teaspoon salt into the skillet over the machaca mixture. Stir continuously and cook for an additional 2 minutes, or until the eggs are fully cooked and scrambled.
  7. Garnish and serve: Remove from heat and sprinkle the dish with chopped fresh cilantro. Serve immediately for a warm and flavorful breakfast.

Notes

  • Machaca is dried shredded beef and can often be found in Mexican markets or specialty stores. If unavailable, use shredded cooked beef as a substitute.
  • Adjust the jalapeño amount according to your spice preference.
  • For a richer flavor, add a sprinkle of queso fresco or cheddar cheese on top before serving.
  • Traditionally served with warm tortillas or refried beans for a complete breakfast.
