Description

This recipe for Mascarpone Mashed Potatoes elevates traditional mashed potatoes by incorporating creamy mascarpone cheese and fresh chives, delivering a rich, velvety texture perfect for festive occasions like Thanksgiving or Christmas.

Ingredients

Potatoes and Seasoning

  • 3 pounds russet potatoes, peeled and cut into chunks
  • 2 dried bay leaves
  • Kosher salt, to taste
  • 1/4 teaspoon pepper

Liquids and Dairy

  • 1 cup whole milk
  • 1/4 cup chicken broth
  • 6 ounces mascarpone cheese, room temperature
  • 2 tablespoons butter, melted

Garnish

  • 1/2 bunch chives (about 1/2 inch diameter), snipped

Instructions

  1. Boil the Potatoes: Place the peeled and chunked potatoes, dried bay leaves, and 1 teaspoon of salt in a stockpot filled with hot water. Bring to a boil over medium-high heat, then reduce the heat to a simmer. Cook the potatoes until they are very tender, approximately 20 to 30 minutes.
  2. Prepare the Mascarpone Mixture: While the potatoes are cooking, whisk together the whole milk, chicken broth, mascarpone cheese, and melted butter in an oven-safe bowl large enough to hold the potatoes later. Stir in the pepper to season the mixture.
  3. Drain and Rice the Potatoes: Once the potatoes are tender, drain them thoroughly, discarding the bay leaves. Press the potatoes through a potato ricer directly into the bowl containing the mascarpone mixture. Stir gently until fully combined.
  4. Season and Bake: Taste the mashed potatoes and add salt as needed. Cover the bowl with aluminum foil and bake in a preheated 350ºF oven until heated through, approximately 15 to 20 minutes.
  5. Finish with Chives: Remove the foil, stir in the snipped chives, then serve warm.

Notes

  • Russet potatoes are ideal for fluffy mashed potatoes due to their high starch content.
  • Using a potato ricer ensures a smooth, lump-free texture.
  • Mascarpone adds a subtle sweetness and creaminess to traditional mashed potatoes.
  • For a vegetarian version, substitute chicken broth with vegetable broth.
  • Make sure the mascarpone is at room temperature to blend easily with the other liquids.
