Description

Monterey Chicken is a quick and easy dinner recipe that combines juicy, tender chicken breasts with smoky barbecue sauce, melted Monterey Jack and cheddar cheese, and fresh toppings like diced tomatoes and green onions. Ready in just 30 minutes, this restaurant-style meal is perfect for busy weeknights or casual family dinners, offering rich, comforting flavors and versatility with customizable toppings and spice levels.

Ingredients

Chicken and Seasonings

  • 4 boneless, skinless chicken breasts
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 2 tablespoons olive oil

Sauces and Cheese

  • 1 cup barbecue sauce
  • 1 cup shredded Monterey Jack cheese
  • ½ cup shredded cheddar cheese

Toppings

  • 8 slices smoked turkey strips, cooked and crumbled
  • 1 large tomato, diced
  • ¼ cup sliced green onions

Instructions

  1. Pound the Chicken: Place chicken breasts between two layers of plastic wrap and pound them to an even thickness for uniform cooking.
  2. Season the Chicken: Pat chicken dry with paper towels, then season both sides evenly with garlic powder, paprika, salt, and pepper.
  3. Heat the Skillet: Warm olive oil in a large oven-safe skillet over medium-high heat to prepare for searing.
  4. Sear the Chicken: Add chicken to the skillet and cook for 4–5 minutes on the first side until nicely browned.
  5. Flip and Sauce: Turn the chicken over, brush the tops with barbecue sauce, and cook another 4–5 minutes until the internal temperature reaches 165°F.
  6. Preheat Broiler: While chicken cooks, preheat your oven’s broiler to medium-high to prepare for melting cheese.
  7. Cheese and Final Broil: Flip the chicken once more, brush with more barbecue sauce, then top each breast with Monterey Jack and cheddar cheese. Place the skillet under the broiler for 2–3 minutes until cheese is melted and bubbly.
  8. Rest the Chicken: Remove the skillet from the oven and let the chicken rest for a few minutes to retain juices.
  9. Add Toppings and Serve: Garnish the chicken with crumbled smoked turkey strips, diced tomatoes, and sliced green onions. Serve hot alongside your preferred side dishes.

Notes

  • Use pepper jack cheese instead of Monterey Jack for a spicier variation.
  • Add sautéed mushrooms or jalapeño slices for extra flavor and heat.
  • Grilled pineapple can add a sweet contrast to the smoky BBQ flavors.
  • Use reduced-fat cheese for a lighter version.
  • Serve the chicken over fresh salad for a low-carb option.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 2 months.
  • Reheat leftovers in a 350°F oven for 10–12 minutes to preserve cheese texture.
