Description

Crispy, golden oven-fried feta rolls flavored with fresh dill and garlic, paired with a sweet and spicy chili honey sauce. These delightful phyllo-wrapped rolls are perfect as an appetizer or snack, combining savory feta with aromatic herbs and a kick of chili in a crunchy, flaky shell.

Ingredients

Feta Roll Filling

  • 8 ounces feta cheese, crumbled
  • 2 tablespoons fresh chopped dill
  • 1 clove garlic, grated

Phyllo Rolls

  • 16-20 sheets frozen phyllo dough, thawed
  • 1 tablespoon extra virgin olive oil, plus more for brushing

Chili Honey Sauce

  • 1 tablespoon salted butter
  • 1 tablespoon extra virgin olive oil
  • 1-2 teaspoons chili flakes
  • 1/2 teaspoon cumin seed
  • 1/3 cup honey

Instructions

  1. Preheat Oven: Preheat the oven to 425° F (220° C). Line a baking sheet with parchment paper to prevent the rolls from sticking and for easy cleanup.
  2. Prepare Filling: In a bowl, combine the crumbled feta cheese, fresh chopped dill, and grated garlic. Mix thoroughly to evenly distribute flavors.
  3. Assemble Rolls: Place one sheet of thawed phyllo dough on a clean surface. Gently fold it in half crosswise to form a rectangle. Brush the edges lightly with olive oil to help seal. On the short end, place about 1 rounded tablespoon of the feta mixture. Roll the phyllo dough over the filling, folding in the edges burrito-style to seal the filling inside. Place the roll seam-side down on the prepared baking sheet. Repeat this process to make 12-16 rolls, keeping the unused phyllo covered with a damp towel to prevent drying.
  4. Brush Rolls: Lightly brush the tops of each phyllo roll with additional olive oil to promote browning and crisping during baking.
  5. Bake: Bake the rolls in the preheated oven for 20 minutes or until they turn golden brown and crispy on top.
  6. Prepare Chili Honey Sauce: While the rolls bake, melt together the salted butter, 1 tablespoon olive oil, chili flakes, and cumin seeds in a small skillet over medium heat. Cook for 1-2 minutes until fragrant, then remove from heat and stir in the honey to combine.
  7. Serve: Serve the warm feta rolls with the chili honey sauce either for dipping or drizzling over the rolls for a perfect balance of sweet and spicy.

Notes

  • Keep Phyllo Dough Covered: Always cover the phyllo dough sheets with a damp towel while assembling to prevent them from drying out and cracking.
  • Rolling Technique: Fold the sides in tightly while rolling the phyllo to secure the filling and prevent leakage during baking.
  • Adjust Spice Level: Modify the amount of chili flakes in the honey sauce to suit your preferred heat level.
  • Storage: Store any leftover rolls in an airtight container in the refrigerator and reheat in the oven to maintain crispiness.
