Ingredients

For the Vinaigrette

  • ¼ cup extra virgin olive oil (can substitute canola oil)
  • ¼ cup red wine vinegar or white wine vinegar
  • ¼ cup pomegranate juice
  • 1 tablespoon Dijon mustard
  • 2 teaspoons honey
  • Pinch of salt (preferably thick flakes)
  • Pinch of black pepper (preferably thick flakes)


Instructions

  1. Combine Ingredients: Add the extra virgin olive oil, red or white wine vinegar, pomegranate juice, Dijon mustard, honey, salt, and black pepper into a bowl, jar, or the container of a blender.
  2. Mix Thoroughly: Whisk vigorously by hand, shake the jar well, or blend on low speed until all the ingredients are fully combined and the vinaigrette is emulsified.
  3. Serve or Store: Use immediately to dress your favorite salad or store in the refrigerator in a sealed container for up to one week. Shake or whisk before each use as oil and vinegar may separate.
