This vibrant Potsticker Salad combines tender vegan gyoza dumplings with fresh heirloom tomatoes, crisp cucumbers, scallions, and fragrant basil, all tossed in a bold tamari–balsamic dressing. Perfect for quick lunches, light dinners, or meal prep, this salad is fresh, colorful, and offers a delightful balance of textures and flavors.


Ingredients

Salad

  • 1 lb frozen gyoza dumplings (vegan)
  • 1 lb heirloom tomatoes, mixed colors
  • 1 English cucumber or 4 Persian cucumbers
  • 5 scallions, thinly sliced
  • 1 red chili pepper (optional)
  • ½ cup basil leaves
  • 1 Tbsp toasted sesame seeds or crispy fried onions

Dressing

  • 3 Tbsp low-sodium Tamari
  • 2 Tbsp balsamic vinegar
  • 2–3 tsp maple syrup

Optional Add-Ins

  • Thinly sliced cabbage
  • Carrot
  • Bean sprouts
  • Edamame
  • Garlic chili sauce (for serving)


Instructions

  1. Steam the Dumplings: Steam the frozen vegan gyoza dumplings according to package directions until tender. Transfer them to a large bowl and toss with 1 teaspoon of sesame oil or a splash of water to prevent sticking.
  2. Prepare the Dressing: In a small bowl, whisk together 3 tablespoons low-sodium tamari, 2 tablespoons balsamic vinegar, and 2 to 3 teaspoons maple syrup until well combined.
  3. Toss Dumplings with Dressing: Pour the dressing over the warm dumplings and gently toss to ensure each dumpling is evenly coated with the flavorful dressing.
  4. Prepare Vegetables: Slice the heirloom tomatoes into wedges. Thinly slice the cucumber(s) and scallions. If desired, thinly slice the red chili pepper for some heat.
  5. Combine Salad Ingredients: Add the sliced tomatoes, cucumbers, scallions, and optional chili pepper to the bowl with the dressed dumplings.
  6. Add Fresh Herbs and Seeds: Tear the fresh basil leaves over the salad and sprinkle with 1 tablespoon toasted sesame seeds or crispy fried onions for crunch.
  7. Serve: Serve the salad at room temperature, optionally adding garlic chili sauce or extra crunchy veggies such as cabbage, carrot, bean sprouts, or edamame.
  8. Optional Pan-Fry Method: Alternatively, heat a skillet over medium heat with enough oil to coat the bottom. Spread the dumplings evenly and cook for about 5 minutes until heated through and lightly crisp before proceeding with the rest of the salad preparation.
