Ingredients
Soup Ingredients
- 3 cups garlic and herb roasted carrots, chopped
- 1 tablespoon unsalted butter
- ½ medium onion, chopped
- 1½ tablespoons fresh ginger, grated
- 6 cups vegetable broth
- 1½ cups half and half cream
- Salt and pepper to taste
Instructions
- Prepare Roasted Carrots: Roast garlic-and-herb carrots ahead of time or use leftover roasted carrots. Chop them into 1 to 2-inch pieces and set aside.
- Sauté Onion: Melt the butter in a heavy pot over medium heat. Add the chopped onion and cook for 2 to 3 minutes until softened and fragrant.
- Add Ginger: Stir in the grated fresh ginger and cook for another minute to release its flavor.
- Combine Ingredients: Add the roasted carrots and vegetable broth to the pot. Bring the mixture to a boil.
- Simmer Soup: Reduce the heat to medium-low, cover the pot, and let it simmer gently for 30 minutes to allow flavors to meld.
- Puree Soup: Carefully transfer the soup into a blender or use an immersion blender to puree until smooth.
- Finish with Cream: Return the pureed soup to the pot and stir in the half-and-half cream until well combined.
- Season: Add salt and pepper to taste, adjusting the seasoning as needed.
- Serve: Ladle the soup into bowls and enjoy warm.
Notes
- Go vegan by replacing butter with 2 tablespoons olive oil and substituting half-and-half cream with coconut milk or cream.
- To adjust thickness, add water or broth for a thinner consistency or simmer uncovered longer to thicken.
- Store soup in an airtight container in the fridge for up to 4 days.
- Freeze leftovers in airtight containers or freezer bags for up to 3 months; thaw overnight in the fridge.
- Reheat gently on the stove over medium-low heat, adding broth if needed, or microwave stirring every minute.
