Description

This Roasted Cherry Tomato Pasta with Burrata is a simple yet flavorful Italian-inspired dish featuring burst cherry tomatoes roasted to perfection with garlic and olive oil, tossed with linguine pasta and fresh basil, then topped with creamy burrata cheese for a rich finish. It’s quick to prepare and perfect for a cozy weeknight meal or a casual dinner with friends.

Ingredients

Tomato Mixture

  • 500g (1lb) cherry tomatoes
  • 6 cloves garlic, pressed
  • 4 tbsp olive oil
  • Salt to taste
  • 6-8 fresh basil leaves, chopped (or 1 tsp dried basil)

Pasta

  • 500g (1lb) linguine pasta

Topping

  • 300g (10oz) burrata cheese

Instructions

  1. Preheat and Roast Tomatoes: Preheat your oven to 450°F (220°C). In a shallow baking dish, combine the cherry tomatoes, pressed garlic, salt, and olive oil. Roast the mixture for 15–20 minutes until the tomatoes burst and release their juicy flavors.
  2. Cook Pasta: While the tomatoes are roasting, bring a large pot of salted water to a boil and cook the linguine according to the package instructions until al dente. Drain the pasta once cooked.
  3. Prepare the Sauce: Remove the tomatoes from the oven. Using a fork, gently smash about two-thirds of the roasted tomatoes to create a saucy texture. Add the chopped fresh basil and mix everything together thoroughly to blend the flavors.
  4. Toss Pasta with Sauce: Add the drained pasta directly to the baking dish with the roasted tomato sauce. Toss well to combine everything evenly. Adjust seasoning with additional salt if needed.
  5. Add Burrata and Serve: Tear the burrata cheese into smaller pieces and either place them on top of the pasta or gently fold into the pasta mixture before serving for a creamy, luscious finish.

Notes

  • Use good-quality olive oil for the best flavor.
  • If fresh basil is unavailable, dried basil works as a substitute.
  • Burrata can be substituted with fresh mozzarella if preferred.
  • Adjust the roasting time if your oven runs hot or if you like your tomatoes more caramelized.
  • Reserve some pasta water to loosen the sauce if desired.
