Description
A light and refreshing Watermelon Strawberry Salad perfect for summer, featuring juicy watermelon cubes, fresh sweet strawberries, crumbled feta cheese, and a zesty honey lime dressing with a hint of fresh mint and chia seeds.
Ingredients
For The Salad
- 3 cups strawberries, chilled, tops cut off
- 2 tablespoons fresh mint, chiffonade or chopped finely
- 3 cups watermelon, chilled, seedless if possible, cubed
- ½ teaspoon chia seeds
- ½ cup feta cheese, crumbled
For The Dressing
- 2 tablespoons olive oil
- 1 whole fresh lime, juiced
- 1½ teaspoons honey or maple syrup (liquid type) as a substitute
- Crushed sea salt flakes to taste
- Black pepper to taste
Instructions
- Prepare the Dressing: In a mason jar or a small bowl, combine olive oil, freshly squeezed lime juice, honey (or maple syrup), crushed sea salt flakes, and black pepper. Shake or whisk well until fully emulsified and set aside.
- Prepare the Fruit: Trim the tops off the strawberries and slice each into 3 or 4 pieces. Cut the watermelon into 1 to 1½ inch cubes, ensuring any seeds are removed for ease of eating.
- Assemble the Salad: Arrange the watermelon cubes and strawberry slices on a serving platter. Gently toss in the finely chopped fresh mint, crumbled feta cheese, and sprinkle the chia seeds evenly over the top.
- Dress the Salad: Drizzle the prepared honey lime dressing evenly over the fruit and feta mixture. Optionally, add extra fresh lime juice, sea salt flakes, and black pepper to taste for an enhanced flavor.
- Serve: Serve the salad immediately to enjoy its fresh and vibrant flavors at their best.
Notes
- Use seedless watermelon for easier eating and presentation.
- Adjust the amount of honey or lime juice in the dressing to balance sweetness and acidity to your taste.
- Chilling the fruit beforehand enhances the salad’s refreshing qualities.
- For a vegan version, substitute feta cheese with a plant-based cheese alternative or omit it entirely.
- Gently toss ingredients to avoid bruising the delicate fruit.
